We have a set rotation of maps that the server will run through. If an admin is on at the time, and everyone is in agreement, the admin has the ability to change the map on the spot.

FYI -- We always add in Winter Crash between Thanksgiving (end of November) Through the New Year (Mid January).  Coming soon!!

My god add some new maps already!

I think we all feel the limitations of the stock maps.  The ones not included (very few) are not very conducive to a large number of players in server, which thankfully we seem to have a good amount of the  time.  Several of them just become a spawn kill/spawn camp problem and people complain and leave.  It really isn't the fault of players in server, it is just the way the spawns on the map are situated in a smaller map. 

That being said, members at the Full Admin and above can load the server with any of the stock maps by using the command !map

example:  !map mp_killhouse

Going to those smaller maps should probably be done when there are less than 10 in server and should be done between games, not after another one has already started.
